Wish I'd known then...

CCAP alum chef Jelani Port wished he'd been more encouraging to himself when he was facing finals.  

"(Just remember to) Stick with what you've been practicing.  Utilize your time wisely.

"Have faith, stay focused - and finish strong!"

And chef Cruz Perales reminds finalists to "Relax and enjoy the moment. You've made it this far because of your instructors and your dedication. And listen to the chefs around you! 

"They won't tell you what (or if!) you're doing wrong, but they will nudge you in the right direction - so pay attention (when the judges talk)! 


"Remember, this is just one step which can take you anywhere you can imagine. And prepare yourself for what's next." 

(He knows about this - chef Perales won a full scholarship to Johnson & Wales.)

"Your life is going to change; you're going to see a different world of cooking that you never thought existed. 

"It's going to scare you, but deep down you're going to discover a lot about yourself.

"Be proud you've made it this far. No matter the outcome - your hard work will pay off.
